The Challenge
When the owners of what would become Dosan first approached Octane, our team delivered an immediate “hard pass.”
Not because we didn’t want the project - we loved the owners’ passion and the prime Shaw Avenue location. But the proposed concept was another beer-and-pizza joint in the exact same space that had just failed as a national pizza franchise (Straw Hat Pizza Bar & Grill). The numbers didn’t lie, the market didn’t support it, and we refuse to take on projects we know are destined to fail.
The geographic reality of Clovis/Fresno made the situation even clearer: to succeed here, the restaurant couldn’t just compete locally. It had to become a true destination worth driving to — regardless of distance. A pizza-and-beer concept simply wouldn’t cut it.
Our Approach: The Bold Pivot
We told the owners the truth: “We’ll only take this project if you’re open to a complete business model transformation.”
They were.
Octane led a full strategic overhaul that included:
Deep market and community research (what Clovis was actually missing)
Complete repositioning away from casual pizza toward an elevated, social dining experience
Creation of the brand platform and positioning: “A Social Eatery” — a high-end salad bar for the discerning palate
The new concept fused the nostalgia of Sweet Tomatoes’ legendary salad bar with the classic carving-station appeal of a Hofbrau, elevated with premium ingredients, house-made dressings, hand-carved meats, decadent desserts, and a sophisticated full-service bar and lounge. It was designed to feel upscale yet approachable — perfect for family gatherings, business lunches, date nights, and celebrations.

A website, menus, and collateral that immediately communicate “destination” rather than “just another spot on Shaw”
A launch campaign built around the transformation story and the “two things coming together” meaning behind the name Dosan
Rollout Strategy & Marketing
Octane developed a phased rollout plan that turned the former pizza arcade into a tranquil, luxurious space (goodbye neon lights and 50 TVs; hello soft lighting, open-concept design, and conversation-friendly seating).
We executed:
Pre-launch teaser campaign
Grand opening event (October 3, 2025)
Targeted digital and social media strategy
Local media relations
Community-focused promotions that highlighted the return of beloved salad-bar and carving-station experiences

Dosan Social Eatery opened on October 3, 2025, and immediately became the talk of Clovis and Fresno.
